What is
char siu?
Char siu is Cantonese barbecue pork, commonly finished with a sweet glaze. The meat can appear sliced with rice or noodles, or as a filling in a bun.

Char siu names a pork preparation. Char siu bao names a bun filled with that pork. The words after “char siu” tell you the form of the order.
The glaze and colour vary
Uwajimaya describes sweet glazing and seasonings that vary by recipe. A red exterior is a familiar feature, but colour does not reveal a restaurant’s full ingredient list, meat cut or cooking method.

Do not assume all roast pork is char siu
Menu wording may distinguish barbecue pork from a crisp-skinned pork preparation. Ask for the exact item rather than choosing only by the English words “roast pork”. A photograph of red meat is not enough to establish the recipe.
A New York ordering example
Great NY Noodletown lists roasted meats and shrimp wonton soup on its restaurant site. E Noodle lists pork buns and several meat-and-noodle combinations in separate categories. Check whether you want the meat, a noodle bowl, a rice plate or a bun.
